Soft cherry cookies - Mjuka körsbärsformar

Mjuka körsbärsformar

Juicy cherries ”personalize” these cookies. Serve them with a dab of whipped cream!

18 to 20 cookies

3½ oz butter or margarine
2/3 cup sugar
2 eggs
1 ¼ cups flour
2 tsps cocoa powder
1 tsp ground cinnamon
1 tsp crushed instant coffee
½ tsp ground cloves
4 tbsps milk
fresh juice from ½ lemon
good ¾ cup canned cherries

Stir fat and sugar until fluffy and add the eggs, one by one. Mix flour, cocoa baking powder, cinnamon, coffee and cloves in a bowl. Blend the flour mixture into the egg batter and then add milk and lemon juice. Blend in the cherries.

Drop out the batter into greased small baking tins or double muffin paper tins. Fill to approx 2/3 and bake in the middle of the oven at 175C/gasmark 4 for 12 to 15 minutes or until done. Allow to cool slightly, unmould onto a rack and let cool completely.
