Cinnamon cookies - Ljusa kanelbröd

Ljusa kanelbröd

You get approx 60 lovely cookies if you make one batch according to this recipe. Store them in airtight jars or freeze them and take out a few at a time.

Approx 60 cookies

Good 7 oz butter or margarine
1 ¼ cup sugar
2 eggs
1 tbsp whipping cream
2½ cups flour
1 tsp baking powder
dash salt
4 tbsps powdered sugar
1 tbsp ground cinnamon

Stir fat and sugar in a bowl until fluffy. Add the eggs, one by one, and then cream. Mix flour, baking powder and salt. Stir the flour mixture into the batter and stir until smooth. Leave to set in the fridge for about 1 hour.

Mix powdered sugar and cinnamon on a plate. Roll the dough to balls and roll them in the cinnamon sugar. Put them with about 1 inch in between on baking paper plates. Bake in the middle of the oven at 200C/gasmark 6 for 7 to 8 minutes.

Let the cookies cool on a rack and then keep them in airtight jars.
