Swiss oven-baked macaroni - Schweizisk makaronigratäng

Schweizisk makaronigratäng

A creamy macaroni gratin like this one is lovely served with sausages, ham or chicken. A salad and bread is also needed, as always in my case (at least the salad …).

4 to 5 servings

Good 2 ¾ to 3 ¼ cups macaroni
water, salt
2 oz butter or margarine
4 tbsps flour
2½ cups milk
2 cups grated, flavourful cheese,
preferably several good ones :-D
(you can also substitute some of
the grated cheese with blue cheese)
½ to 1 tsp salt
dash white pepper
1 chili pepper (optional)
2 tbsps melted butter or margarine
3 to 4 tbsps dried breadcrumbs

diced sweet peppers

Boil the macaroni in salted water according to package instructions. Drain well. Melt 1 ¾ oz fat in a saucepan, beat in the flour and then the milk and boil for a couple of minutes. Add 2 cups grated cheese, salt, pepper and chopped chili fruit if you wish. Flavour to taste and adjust if necessary.

Blend the macaroni into the stew and pour it all in a greased, oven-proof dish. Mix melted fat, dried breadcrumbs and 4 tbsps grated cheese and divide it on top of the macaroni. Bake in the middle of the oven at 225C/gasmark 7 for 20 to 30 minutes. Decorate with diced peppers and serve.
