Sliced loin of pork with bacon sizzle - Skivad karré med baconfräs

Skivad karré med baconfräs

An easy-made, delicious everyday dish and still quite unusual. The meat is fried together with a veggie mix, where the bacon is poignant.

4 servings

4 slices loin of pork
1½ tbsps butter or margarine
salt, pepper
1 red sweet pepper
5 oz bacon
1 piece leek, 2 inches
1 can mixed mushrooms, approx 7 oz
½ tbsp Worcestershire sauce
1 tsp soy sauce
dash white pepper

chopped parsley

Melt 1 tbsp fat in a large saucepan and brown the meat on both sides until coloured. Flavour with salt and pepper. Transfer the meat to a plate and keep warm.

Chop the pepper and cut the bacon in pieces. Shred the leek. Melt remaining fat and sizzle pepper, bacon, leek and well-drained mushrooms for about 5 minutes. Add Worcestershire sauce, soy sauce and pepper and simmer for a minute or so. Flavour to taste.

Put the meat back in the pan and put a lid on. Fry the meat and bacon mix for about 15 minutes, sprinkle with parsley and serve.
