Pub sandwich - Pubmacka

Leftover chicken or turkey in the fridge? Then make something really good. With salami, tomatoes and cheese you quickly make a delicious sandwich, excellent with a glass of beer.

4 sandwiches

3 tbsps soft butter or margarine
1 large, crushed garlic clove
4 bread rolls
2 to 3 tomatoes
1 tsp capers
2 cups chopped turkey
or chicken breast
1 tsp oregano
¼ tsp salt
2 tbsps cooking oil
1 ¾ cups grated cheese, e.g. Cheddar
12 slices salami
some cayenne

Mix fat and crushed garlic. Split the rolls and spread the garlic butter on the halves. Place the breads on an oven-proof dish or a baking plate and warm them in the middle of the oven at 225C/gasmark 7 for about 5 minutes.

Chop tomatoes and capers and mix with turkey and oregano. Flavour to taste with salt. Heat the oil in a saucepan and sizzle the mixture for a couple of minutes. Blend in half of the cheese and then divide the mixture onto 4 of the bread halves. Put on the salami, sprinkle with remaining cheese and some cayenne.

Bake in the middle of the oven at 225C/gasmark 7 for about 5 minutes until the cheese has melted and the sandwiches are really hot. Put on the upper halves and serve the sandwiches.
