Orange glazed meat loaf - Apelsinglaserad färslimpa

Apelsinglaserad färslimpa

A festive version of the everyday meatloaf – the ground meat is mixed with small pieces of smoked ham which gives it an extra delicious flavour, and the orange glaze makes it festive.

4 servings

3½ oz smoked ham
14 oz ground pork or 50% beef, 50% pork
2 slices white loaf bread
good 1/3 cup milk
1 egg
1 tsp salt
dash white pepper
dash coarsely ground black pepper

Orange glaze:
fresh juice from 1 orange
2 tbsps brown sugar
1 tsp Maizena or cornflour

orange slices

Finely dice the ham and mix it with the ground meat in a bowl. Crumble the bread and let it swell in the milk for a couple of minutes. Mix the meat with egg, salt, white pepper and bread. Shape to a loaf, put it in an oven-proof dish and sprinkle with black pepper.

Mix orange juice, brown sugar and Maizena in a saucepan and boil while stirring until it thickens.

Put the meat loaf in the middle of the oven at 175C/gasmark 4 for 50 to 60 minutes. Brush occasionally with the glazing, decorate with orange slices and serve the meat loaf cut in slices with mashed potatoes, pickled gherkin and a green salad with a mustard dressing.
