Old-fashioned raspberry "kräm" - Hallonkräm på gammalt vis

Hallonkräm på gammalt vis

Raspberries and apples go well together. Here I’ve made it extra festive and baked it in the oven.

4 to 5 servings

2 apples
good 1/3 cup concentrated raspberry drink
2/3 cup water
4 tsps Maizena or cornflour
dash ground cinnamon
dash ground nutmeg
7 oz raspberries
2 tbsps butter or margarine
1/3 cup sugar
1 egg
good 1/3 cup flour
½ tsp baking powder

For serving:
whipped cream

Peel, core and slice the apples. Mix raspberry drink, water, Maizena, cinnamon and nutmeg in a saucepan and boil for a few minutes until it thickens. Blend in raspberries and apples in the “kräm” and pour it all in an oven-proof dish.

Stir fat and sugar until fluffy and add the egg. Mix flour and baking powder and turn it into the batter. Drop it out over the fruit and bake in the upper part of the oven at 175C/Gas 4 for 25 to 35 minutes.

Serve with whipped cream.
