Kassler Provencale


Serve oven-baked kassler with a lovely taste of garlic. The dish is easy to make even if you're cooking for many people, and it’s always a success.

4 servings

1 to 1 1/3 lbs kassler (warm-smoked cured
loin of pork)
1 ¼ cup whipping cream
good 1/3 cup chopped parsley
2 to 3 crushed garlic cloves
½ tsp salt
dash black pepper
good ¾ cup grated cheese


Cut the kassler in thin slices and put them in one or two rows in the middle of an oven-proof dish. Lightly whip the cream and blend in parsley, garlic, salt and black pepper. Dab it out over the meat and sprinkle with grated cheese. Bake in the middle of the oven at 175 to 200C/Gas 4 to 6 for about 30 minutes.

Sprinkle with some chopped parsley and serve with rice, pasta or boiled potatoes, a tossed salad and some white bread.
