Baconkorv med fyllning

Here, a popular everyday dish that has come alive with the help of some fantasy. The sausages are delicious when filled with cheese and wrapped up in bacon.

4 servings

6 – 8 thicker sausages, like franks but thicker
(in Sweden we call them “breakfast sausages”
or “lunch sausages”)
2 to 3 oz cheese, e.g. Cheddar
1½ to 2 tomatoes
2 to 3 tbsps mustard
2 to 3 tbsps mild chili sauce
6 to 8 slices bacon

Cut the sausages lengthwise but not all the way through. Put them in an oven-proof dish or pan. Shred the cheese and cut the tomatoes in thin wedges. Spread mustard and chili sauce in the cuts, then fill with shredded cheese and tomato wedges. Wrap a slice of bacon around each sausage and secure with a toothpick if needed. Bake the sausages in the middle of the oven at 200C/gasmark 6 for about 20 minutes or until the sausage is done.

For serving, you can make a really good potato mash, dab it out around the sausages and sprinkle with grated cheese. The mash is baked at the same time as the sausages, naturally. Or you can serve with boiled potatoes or stewed macaroni and a green salad with grated carrots.
