Crunchy orange cookies - Knapriga apelsinkakor

Knapriga apelsinkakor

Crunchy, cut cookies with flavour of oats and orange. They’re easy to bake since they neither need to be shaped nor rolled.

60 cookies

7½ oz butter or margarine (225 g)
2 cups sugar
2 eggs
grated zest from 2 oranges
2 cups flour
4 tsps baking powder
3 cups oats
2 tbsps fresh orange juice

Stir fat and sugar until fluffy. Add eggs and orange zest. Mix flour, baking powder and oats and stir into the batter together with the orange juice. Drop out the batter on greased baking plates (or use baking paper) with approx 1 ¼ inch between them.

Bake in the middle of the oven at 200C/Gas 6 for about 12 minutes. Leave the cookies for a few minutes on the baking plate before transferring them to a rack to cool completely.
