Creamy fruit salad - Krämig fruktsallad

Krämig fruktsallad

A scrumptious dessert is hard to resist. Ice cream, fruit and a creamy berry sauce are extremely good together!

4 to 6 servings

Good ¾ to 1 ¼ cups fresh or
frozen strawberries, approx 8 oz
4 to 5 peach halves
2 bananas
1 ¾ oz butter or margarine
good 1/3 cup brown sugar
good 1/3 cup orange juice
1 to 2 tbsps fresh lemon juice
dash ground cinnamon
¾ tbsp Maizena or cornflour
2 tbsps orange juice
2 cups vanilla ice cream

Cut good 1/3 cup strawberries, 2 peach halves and 1 banana in slices. Melt the fat in a saucepan, blend in the sugar and simmer slowly for a couple of minutes. Add good 1/3 cup orange juice, lemon juice, cinnamon and the sliced fruit. Simmer slowly, uncovered, for 15 to 20 minutes, stirring occasionally.

Strain the fruit (keep the liquid, that’s the sauce!) and pour the liquid back in the saucepan. Mix Maizena with orange juice and beat it into the sauce and boil for a minute or so until it thickens.

Slice remaining berries and fruit and spoon the vanilla ice cream into serving bowls. Add fruit and berries and pour the sauce on top.

Serve and enjoy! You can flavour the sauce with ½ to 1 tsp vanilla sugar if you wish, as a variation.
