Chicken ratatouille - Kycklingratatouille


Here, chicken is served with vegetables like zucchini, aubergine and sweet peppers in a flavourful casserole.

4 servings

4 chicken breasts, skin- and boneless
2 small zucchini
1 small aubergine
1 onion
1 green sweet pepper
8 oz fresh mushrooms
3 to 4 tbsps cooking oil
2 crushed garlic cloves
1 can crushed tomatoes, 14 oz
½ to 1 tbsp Italian salad spice
½ tsp dried thyme (if desired)
salt, pepper

Cut chicken, zucchini and aubergine in cubes. Chop the onion, cut the pepper in pieces and slice the mushrooms. Heat the oil in a frying pot or a saucepan and brown the chicken for about 5 minutes. Add zucchini, aubergine, onion, pepper, mushrooms and garlic and sizzle it all for a few minutes. Add tomatoes, salad spice and thyme if desired.

Boil for about 10 minutes, uncovered, until the vegetables are tender. Flavour to taste with salt and pepper and serve with rice or pasta and a crisp salad.
