Blueberry Split - Blåbär split

Blåbär Split

A luxurious blueberry sauce flavoured with port and cinnamon. Serve it warm with ice cream and a small cookie or biscuit.

4 to 6 servings

1 ¼ cup fresh blueberries
or approx 7 oz frozen berries
grated zest from 1 lemon
3 tbsps redcurrant jelly
2 tbsps port
1 tbsp Maizena or cornflour
1 tbsp water
2 tsps fresh lemon juice
½ tsp ground cinnamon

vanilla or nougat ice cream

Mix blueberries, grated lemon zest, redcurrant jelly and port in a saucepan. Heat on low heat while stirring until the jelly has dissolved. Stir the Maizena with water and stir it into the sauce. Bring to a boil so that it thickens. Flavour to taste with lemon juice and cinnamon.

Pour the blueberry sauce over the ice cream and serve immediately.

You can substitute the port with grape juice.
