Bacon baked tomatoes - Bacongratinerade tomater

Bacongratinerade tomater

Warm tomatoes are delicious, and this dish with leek and bacon is excellent to serve with different egg dishes or on the smorgasbord.

4 servings

4 large tomatoes
½ tsp herbal salt
dash black pepper
scant ¼ to good 1/3 cup finely
shredded leek, the green part
8 slices bacon
good ¾ cup flavourful grated cheese


Split the tomatoes and put them on an oven-proof dish, cut side up. Flavour with herbal salt and pepper and sprinkle with leek. Cut the bacon slices in two and put them over the tomato halves. Sprinkle with cheese.

Bake in the upper part of the oven at 250C/very hot for about 10 minutes or until the tomatoes are tender. Allow to cool slightly, then decorate with parsley sprigs and serve.
